If you thought this salad was off limits because it's loaded with fat and calories, think again: Our slimmed down version goes easy on the oil, cheese and portion size. Using a blender to whip together the dressing, means you can have the classic fave ready to serve in about 15 minutes. Leave out the anchovies from the dressing if you don't care for them, just add a dash more Worcestershire sauce. It will still have its characteristic salty-tangy flavor. Serve it alongside your favorite main dish pasta or with a steak and potato. Or make it a meal and top it with some grilled chicken, salmon, or shrimp.

Ingredients

Fresh lemon juice

Water

2 Tbsp

Grated Parmesan cheese

2 Tbsp

Garlic

2 small clove(s), sliced

Olive oil

1 tsp

Red wine vinegar

1 Tbsp

Anchovies packed in oil

2 average, finely chopped or mashed with a fork

Dijon mustard

1 tsp

Worcestershire sauce

½ tsp

Black pepper

¼ tsp, freshly ground

Romaine lettuce

4 cup(s), shredded, chopped, rinsed well and patted dry

Instructions

  1. Combine all ingredients, except lettuce, in a blender or food processor; purée until blended. (Note: Omit the anchovies if you do not like their flavor.)
  2. Place lettuce leaves in a large bowl and toss with dressing until well coated. Yields about 2 cups per serving.
