Chocolate-Dipped Chestnuts with Pistachios

Meaty, starchy, sweet chestnuts take a dessert-y turn in this easy recipe. They’re dipped in melted chocolate and sprinkled with chopped pistachios for a delicious and beautiful bite. We like to use precooked chestnuts for convenience; you’ll usually find them in jars or vacuum-sealed packages in the produce section, near the fresh in-shell chestnuts. We love the green color contrast from the pistachios, but you can use another nut if you prefer; pine nuts would be particularly delicious.

Semisweet chocolate chips
¼ cup(s)
Roasted European chestnuts

Shelled pistachio nuts (unsalted, dry roasted or raw, no sugar added)
2 Tbsp, finely chopped
Instructions

Place the chocolate chips in a small microwave-safe bowl. Microwave on High until melted and smooth, 1 to 1 ½ minutes, stopping to stir every 30 seconds.

Line a small sheet pan with parchment or wax paper. Dip the rounded side of each chestnut in the melted chocolate; place on the prepared pan chocolate-side up. Sprinkle evenly with the pistachios. Refrigerate until set, about 5 minutes.
