Chipotle black beans with orange and lime

Here, humble canned black beans get gussied-up with chipotle peppers, cumin, orange juice and lime juice which gives them the perfect balance of sweet-spicy flavor. They’re fantastic over rice as a vegetarian meal. But, they’re also excellent served as a sauce spooned over pork, a filling for a burrito or as a simple side dish topped with low-fat sour cream. As an alternative, you could also turn them into a festive party dip and accompany them with baked tortillas. Fragrant cilantro lends itself well to this dish but you could substitute chopped green onions if you have them on hand.

Olive oil

Minced onion

Ground cumin

Canned black beans

Orange juice

Water

Instructions

Heat oil in a medium-size nonstick saucepan over medium-low heat. Add onion and salt; reduce heat to low and cook, stirring frequently, until onion is softened, about 7 to 8 minutes.

Add chipotle pepper, cumin, beans, orange juice and water; mash beans slightly with a potato masher. Increase heat to medium and simmer until mixture has thickened slightly, about 10 to 15 minutes. Just before serving, stir in cilantro and lime juice; season to taste with salt and pepper. Yields about 1/2 cup per serving.
