For best results, rub the mixture into the chicken about 30 minutes before cooking. This recipe makes enough rub for about 4 pounds of chicken and we recommend using it immediately. Its zesty punch will weaken and become less flavorful when stored for longer than a day. So, plan to make this when serving a crowd or getting a jumps-start on prepping cooked chicken for later in the week.
