Preheat the broiler to High. Coat a 10-inch cast-iron or other ovenproof skillet with cooking spray and heat over medium-high. Add the frozen pepper mix and corn; cook until thawed and softened, stirring occasionally, 3 to 4 minutes. Stir in the rice, salsa verde, and yogurt. Fold in the chicken; cook until heated through, 4 to 5 minutes.

Sprinkle the cheese evenly over the chicken mixture. Broil until the cheese melts, 1 to 2 minutes.
