Fresh cherries add wonderful sweetness, color and moisture to these 6-ingredient breakfast cakes. They take less than 10 minutes to prepare and are a tasty change of pace from eating oatmeal. When fresh cherries are not in season, swap in frozen ones. You can also personalize these cute mini breads with your favorite fruit, oat or almond milk, and other flavor oatmeal packets.

Quaker Lower Sugar Apples and Cinnamon Instant Oatmeal
2 packet(s), or similar product
White self-rising flour
⅓ cup(s)
Egg
1 large egg(s)
Fat free skim milk
¼ cup(s)
Cherries
1 cup(s), pitted, roughly chopped
Powdered sugar (confectioner's)

Instructions

Preheat oven to 350°F. Coat 4 mini loaf pans (about 3 1/2 x 2 inches per compartment) with cooking spray.

Place oatmeal in a bowl; sift flour over top. Whisk egg with milk in another bowl; stir into oat mixture. Add cherries; stir to combine. Divide among prepared pans; smooth in an even layer.

Bake until a tester inserted in center of a loaf comes out clean, 20-25 minutes.

Let cool slightly in pan; remove and serve sprinkled with powdered sugar.
