Fresh blueberries, blackberries, raspberries or a combination of all three would also work well in this recipe. To easily pit the cherries, stick a sturdy straw through their stem ends and press the pits out through the other sides. Use granola without dried fruit for a more authentic texture and flavor.

In a medium microwavable bowl, toss the cherries with the sugar, lemon juice, vanilla extract, and salt; cover and microwave until the cherries get juicy, 2 to 3 minutes. Divide the cherry mixture between two small bowls; top each bowl with 2 tbsp granola and 1 tbsp whipped topping.
