For whenever you have a craving for a cherry crisp but don’t want to make an entire pan, here’s a short-cut recipe that serves one and is just the right size to satisfy your sweet tooth. It can be made in a snap in the microwave and relies on a short ingredient list. Use granola without dried fruit for a more authentic texture and flavor. Fresh blueberries, blackberries, raspberries or a combination of three would also work well in this delicious treat. To easily pit the cherries, stick a sturdy straw through their stem ends and press the pits out through the other sides.

Ingredients

cherries

1 cup(s), pitted and halved

sugar

2 tsp

fresh lemon juice

1 tsp

almond extract

¼ tsp

table salt

1 pinch

low-fat ready-to-eat granola cereal

2 Tbsp

lite whipped topping

2 tsp

Instructions

  1. In a small microwavable bowl, toss cherries with sugar, lemon juice, almond extract and salt; cover and microwave until cherries get juicy. Sprinkle with granola and whipped topping.
  2. Makes 1 serving.
