1 medium, cut into ¼-inch thick rounds
Egg

Shredded part skim mozzarella cheese

Panko breadcrumbs

Paprika
¼ tsp, sweet or smoky

Preheat oven to 425°F. Coat a large baking sheet with cooking spray (or line with a silicone mat).

In a small bowl, whisk the egg. In a separate shallow dish, combine the cheese, panko, salt, pepper, and paprika. Dip a zucchini round into the egg; turn to coat. Next, dip it into the panko mixture; turn to coat both sides and then press mixture to stick to zucchini. Place on the prepared pan; repeat with the remaining ingredients.

Bake until zucchini is tender and panko is golden and crisp, about 15 minutes. Serve immediately.
