Convenience foods help you pull these nachos together in minutes. Short cut the recipe even further by topping the chips with a no-cook combination of drained, canned black beans mixed with drained spicy salsa. You can use nonfat Greek yogurt instead of sour cream, if you prefer.


Ingredients
Fat free refried beans

Canned diced tomatoes
¾ cup(s)
Reduced sodium taco seasoning
1½ tsp, or to taste
Tortilla chips
24 chip(s)
Reduced fat cheddar cheese
½ cup(s), shredded
Reduced fat sour cream
2 Tbsp
Scallions
2 medium, trimmed, thinly sliced
Instructions

Preheat oven to 350°F. Line a sheet pan with parchment paper or a silicone mat.

Combine beans, tomatoes, and taco seasoning in a small saucepan. Heat over medium-low heat, stirring, until combined, 2 to 3 minutes. Taste and add more seasoning, if desired.

Spread chips out in an even layer on prepared pan. Spoon bean mixture over top and sprinkle with cheese. Bake until cheese is melted, about 10 minutes. Serve garnished with sour cream and scallions.
