Cat Cora’s winter greens salad with apples and almonds
Extra virgin olive oil
Fresh lemon juice
4 cup(s), baby variety
Uncooked Brussels sprouts
1 cup(s), sliced
1 large, Fuji, diced or cut into julienne
⅓ cup(s), chopped
4 Tbsp, chopped (or pumpkin seeds or sunflower seeds)
- In a small bowl (or mason jar), combine oil, lemon juice, mustard, honey, and salt. Whisk (or shake) until well combined.
- In a large bowl, place kale, broccoli slaw, Brussels sprouts, apple, parsley, and almonds or seeds. Add dressing; toss to coat.
- Serving Size: 2 cups
