These cute snacks are sweet enough to satisfy dessert cravings while also providing a fresh fruit boost. Brown sugar and vanilla give the cream cheese-yogurt mixture caramel-like richness and flavor depth, the perfect pairing for tart, juicy apples. Use any apples you love, or try a combination; you could use a green apple slice on the bottom and a red apple slice on the top. If you need these to hold up for a while, toss the apple slices with lemon juice to help prevent browning.

Ingredients

Reduced fat cream cheese (neufchâtel)

2 oz, softened

Unpacked light brown sugar

2 Tbsp

Plain fat free Greek yogurt

2 Tbsp

Vanilla extract

¼ tsp

Apple

2 medium, cored

Instructions

  1. In a small bowl, stir cheese with a small whisk until smooth. Whisk in sugar, yogurt, and vanilla.
  2. Cut each apple into 4 thick slices; spread about 1½ tbsp cream cheese mixture over each of 4 apple slices. Top with remaining apple slices.
  3. Serving size: 1 apple sandwich
