Caprese-Style Perciatelli

Add 1 cup of steamed diagonally cut green beans and/or some thickly sliced white mushrooms along with the pasta in step 2.

Ingredients

uncooked pasta

½ pound(s), perciatelli or spaghetti

grape tomatoes

2 cup(s), halved

part-skim mozzarella cheese

4 oz, bocconcini (small mozzarella balls)

basil

¼ cup(s), fresh, chopped

garlic clove(s)

2 medium clove(s), minced

table salt

½ tsp

black pepper

½ tsp

grated Parmesan cheese

3 Tbsp, or Grana Padano

Instructions

  1. Prepare the pasta according to the package directions, omitting the salt if desired. Drain and keep warm.
  2. Gently toss together all the remaining ingredients except the Grana Padano in a serving bowl. Add the pasta and cheese; toss to mix well. Yields 1 1/4 cups per serving.
