Add 1 cup of steamed diagonally cut green beans and/or some thickly sliced white mushrooms along with the pasta in step 2.
½ pound(s), perciatelli or spaghetti
2 cup(s), halved
¼ cup(s), fresh, chopped
2 medium clove(s), minced
Grated Parmesan cheese
3 Tbsp, or Grana Padano
- Prepare the pasta according to the package directions, omitting the salt if desired. Drain and keep warm.
- Gently toss together all the remaining ingredients except the Grana Padano in a serving bowl. Add the pasta and cheese; toss to mix well.
- Yields 1 1/4 cups per serving.
