Add 1 cup of steamed diagonally cut green beans and/or some thickly sliced white mushrooms along with the pasta in step 2.
uncooked pasta½ pound(s), perciatelli or spaghetti
grape tomatoes2 cup(s), halved
part-skim mozzarella cheese4 oz, bocconcini (small mozzarella balls)
basil¼ cup(s), fresh, chopped
garlic clove(s)2 clove(s), medium, minced
table salt½ tsp
black pepper½ tsp
grated Parmesan cheese3 Tbsp, or Grana Padano
- Prepare the pasta according to the package directions, omitting the salt if desired. Drain and keep warm.
- Gently toss together all the remaining ingredients except the Grana Padano in a serving bowl. Add the pasta and cheese; toss to mix well. Yields 1 1/4 cups per serving.
