Cannellini Bean Spread

canned cannellini beans15 ½ oz, rinsed and drained
garlic clove(s)1 clove(s), medium
uncooked red onion(s)2 Tbsp, chopped, minced
fresh parsley1 Tbsp, fresh, flat-leaf, finely chopped
olive oil1 Tbsp, extra-virgin
fresh lemon juice2 tsp
table salt¼ tsp
black pepper⅛ tsp
- Place all ingredients in a food processor; process to a spreadable consistency. Cover and chill until ready to serve. Yields about 2 tablespoons per serving.
