Cajun Crab Cakes

There’s no need for fancy lump crab meat in this recipe since you’re mixing the crab into the other ingredients and then pressing it into cakes.
Dry potato flakes
1 Tbsp, fried

- Stir the crab meat, egg whites, potato flakes, parsley, chives, and Cajun seasoning in a medium bowl until uniform. Form into 4 patties (about 1/3 cup each).
- Lightly coat a large nonstick skillet with nonstick spray; warm over medium heat. Add the patties; cook, turning once, 6 minutes, or until lightly browned and crisp.
