This substantial and spicy salad has all the flavors of your favorite buffalo wings. Chicken tenderloins cook up juicy and tender in a matter of minutes. Just toss them with your favorite hot sauce—try Frank's Red Hot or Cholula here—and serve warm as a nice contrast to the cool salad greens. If blue cheese isn't your favorite, try this with another reduced-fat dressing, such as ranch or caesar instead. Toss in some chopped fresh herbs to boost the fresh flavor factor. Chopped fresh parsley, tarragon, basil, or cilantro would all be wonderful in this mix.

Ingredients

Uncooked boneless skinless chicken breast tenderloin

Hot sauce

⅔ Tbsp, more to taste

Romaine lettuce

1½ cup(s), shredded

Grape tomatoes

½ cup(s), halved

Carrots

½ cup(s), chopped

Celery

½ cup(s), chopped, chopped

Light blue cheese salad dressing

Instructions

Cook chicken tenderloins on a stovetop according to package instructions. Toss with hot sauce and reserve.

Layer lettuce, tomatoes, carrot, and celery in a large bowl.

Drizzle with dressing, cut up and top with chicken, and serve immediately.
