Instructions

  1. Preheat oven to 350°F. Combine flour and baking soda in a large bowl. Whisk in eggs, 1 at a time, until you have a smooth batter. Whisk in vanilla, almond extract, zest, salt, and milk. Stir in sugar and set aside.
  2. Heat an 8-inch flameproof, ovenproof skillet or metal pie pan over low heat until warm. Remove from heat and quickly brush with oil. Pour in batter, scatter berries on top, and sprinkle on almonds.
  3. Bake for 30-35 minutes or until clafoutis is puffed and golden. Slice into 6 pieces, and dust with icing sugar to serve.
  4. Serving size: 1 slice

Notes

Preheating the pan speeds up the baking time and ensures the base cooks evenly. If desired, serve with fat-free plain yogurt.
