LaTortilla Factory Low Carb Whole wheat tortillas, fajita size
2 tortilla(s), also labeled "original" size
Uncooked extra lean 96% lean ground beef

Instructions

In a small bowl, stir together the yogurt, ketchup, mustard, 1/4 tsp onion powder, garlic powder, and a pinch of salt. Stir until well combined. Set aside.

Press half of the beef onto 1 tortilla, spreading in a thin layer to cover the tortilla. Repeat with the remaining beef and tortilla. Season beef with remaining 1/4 tsp onion powder, 2 pinches salt, and black pepper.

Coat a medium nonstick skillet with cooking spray. Heat on medium-high. Add the tortilla, beef side down. Cook 1 to 2 minutes, until browned.

With a wide spatula, carefully flip tortilla over. Place 1/2 of the American cheese slice on one half of the circle of beef. Cook 1 minute, until tortilla is toasted in spots and cheese is mostly melted. Transfer to a platter or cutting board. Repeat cooking with remaining tortilla and cheese.

Top tacos with the onion, lettuce, tomato, pickles, and sauce. Serve immediately with any remaining sauce on the side.
