They are typically served as an appetizer, though this recipe is like a mini version of the classic roast beef with horseradish sauce you might find on a sideboard buffet. The convenience of using sliced-to-order deli roast beef makes this deliciousness come together fast. You can swap watercress or mäche for the arugula if you prefer or top with a sprinkling of fresh herbs like parsley or basil.


Ingredients
Olive oil cooking spray

French bread
6 oz, about an 8-inch long thin loaf, cut into 16 slices
Reduced fat sour cream
⅓ cup(s)
Red onion
3 Tbsp, chopped, diced
Store-bought horseradish
1 Tbsp
Black pepper
¼ tsp, freshly ground (plus extra for garnish)
Arugula
2 cup(s), baby leaves
Deli style roast beef slices
8 oz, thickly cut into 8 pieces and then each piece cut in half to yield 16 pieces total

Preheat oven to 325ºF. Coat a cookie sheet with cooking spray.

Place bread on prepared cookie sheet and lightly coat with cooking spray. Bake until lightly browned and crisp, about 10 minutes; let cool.

In a small bowl, combine sour cream, onion, horseradish and pepper.

To assemble crostini, top each piece of toasted bread with 1 slice beef, 1 teaspoon horseradish sauce, a grind of black pepper and a few arugula leaves. Yields 2 crostini per serving.
