Extra-lean ground turkey is a healthy swap for the usual ground beef in this zesty, quick-cooking sandwich. Opt for a tangy barbecue sauce for extra flavor. The dash of cayenne pepper adds just the right dose of spiciness to the mix. Add more to suit your heat tolerance. Make a double batch of the ground meat mixture. It is delicious as a stuffing for roasted red bell peppers, wonderful folded into an omelet or frittata, and a nice addition to tomato sauce for a bolognese-style sauce to top spiralized veggie noodles or a thin-crust pizza. The meat mixture freezes well too.

Ingredients

Uncooked extra lean ground turkey breast

Bell pepper

½ item(s), medium, chopped

Red bell pepper

½ medium, chopped

Onion

½ medium, chopped

Cayenne pepper

Mixed grain hamburger bun

Instructions

  1. Brown turkey in a nonstick skillet coated with cooking spray, about 8 to 10 minutes. Drain off liquid. Add peppers and onion and cook until tender, about 3 minutes.
  2. Add barbecue sauce and cayenne pepper; heat thoroughly, stirring frequently, about 2 minutes.
  3. Top bottom half of buns with turkey mixture; cover with top half of bun and serve.
