Baked brown rice with kale

This easy oven method yields perfectly cooked brown rice with fluffy, separate grains and a buttery taste (despite not containing any butter). We pack in a full cup of kale per serving. It will seem like a lot, but, like spinach, it wilts significantly when cooked. To streamline prep, use pre-chopped greens.

Dry medium grain brown rice
1 cup(s), or long-grain
Kale
6 cup(s), chopped, loosely packed
Olive oil

Instructions

Preheat the oven to 375°F. Coat an 8-inch square baking dish with cooking spray. Pour the rice into the dish and top with the kale.

In a small saucepan, bring 2 cups of water to a boil with the oil and salt. Pour the water mixture over the rice mixture; stir gently to partially combine. Cover the dish tightly with foil. Bake for 1 hour. Carefully uncover the dish and fluff the rice mixture with a fork.
