This recipe makes a great breakfast, lunch, or dinner. Swap Canadian bacon for the turkey bacon, if you prefer.

Ingredients

Cooking spray

2 spray(s)

Uncooked turkey bacon

2 slice(s)

Egg

2 item(s), large

Whole-wheat tortilla

1 tortilla(s), medium, 8-inches

Avocado

¼ item(s), thinly sliced

Instructions

  1. Arrange the bacon between paper towels on a microwave-safe plate. Microwave on High until crisp, 2 to 2 1/2 minutes. Meanwhile, coat a small nonstick skillet with cooking spray and heat over medium. In a medium bowl, whisk the eggs until well blended. Add the eggs to the pan; cook until scrambled, stirring frequently, 2 to 3 minutes.
  2. Spoon eggs down middle of tortilla, top with avocado, and crumble bacon over top. Roll up and slice in half.
  3. Makes 1 serving.
