This is a simple, go-to salad that comes together in mere minutes. The convenience lies in using store-bought raspberry vinaigrette. All you have to do is toss the dressing, shallots, mixed greens, and Gorgonzola cheese together, then sprinkle the individual servings with almonds right before serving. Of course, with a recipe this simple, the options to change the ingredients from time to time are endless. Try spinach or arugula instead of the mixed greens, any type of cheese you have on hand, or walnuts instead of almonds. Be sure you toast whatever nuts you use, for just a couple of minutes in a dry skillet—it'll really make quite a difference flavor-wise.

Ingredients

Low-fat vinaigrette salad dressing

5 Tbsp, raspberry variety

Shallot

1 medium, thinly sliced

Fresh mixed greens

7 oz, (1 container)

Gorgonzola cheese

2 oz, (1/4 cup), crumbled, or goat cheese

Smoked almonds

1 oz, (2 tbsp), chopped

Instructions

  1. Combine vinaigrette and shallot in large bowl. Add salad greens and toss until coated evenly. Add Gorgonzola and toss until combined. Divide salad evenly among 4 plates and sprinkle with almonds.
  2. Per serving: 1 1/2 cups salad and 1/2 tablespoon almonds
