All you have to do is whisk some sesame oil, ginger, red pepper flakes, and salt together, then toss in the carrots, red peppers, snow peas, and water chestnuts. Feel free to substitute with any type of crunchy veg you have on hand for this versatile recipe. You can also make it ahead of time, as it has to hang in the fridge to let the flavors marry for about an hour.

Dark sesame oil

Fresh ginger
1½ tsp, peeled and grated
Crushed red pepper flakes

Table salt
¼ tsp
Carrots
1½ cup(s), cut into matchsticks
Red bell pepper
1 cup(s), thinly sliced
Snow peas
1 cup(s), whole, trimmed
Canned water chestnuts
8 oz, drained

Combine first 4 ingredients in a medium-size bowl; stir with a whisk. Stir in carrots and remaining 3 ingredients. Cover and let stand 1 hour. Yields about 1 cup per serving.
