Sesame oil lends a nutty flavor to this colorful side dish. It takes only 15 minutes to make and there's no cooking required, so you'll find yourself making it whenever you need to get a quick side on the table. All you have to do is whisk some sesame oil, ginger, red pepper flakes, and salt together, then toss in the carrots, red peppers, snow peas, and water chestnuts. Feel free to substitute with any type of crunchy veg you have on hand for this versatile recipe. You can also make it ahead of time, as it has to hang in the fridge to let the flavors marry for about an hour.

Dark sesame oil

Fresh ginger

1½ tsp, peeled and grated

Crushed red pepper flakes

Table salt

Carrots

1½ cup(s), cut into matchsticks

Red bell pepper

1 cup(s), thinly sliced

Snow peas

1 cup(s), whole, trimmed

Canned water chestnuts

8 oz, drained

Instructions

  1. Combine first 4 ingredients in a medium-size bowl; stir with a whisk. Stir in carrots and remaining 3 ingredients. Cover and let stand 1 hour. Yields about 1 cup per serving.
