You'll love how quickly and easily you can whip up these hearty, delicious apple-cinnamon pancakes. The convenience lies in using store-bought buckwheat pancake mix. We also love the combination of syrup and cinnamon-flavored sweetened applesauce for the topping. And one of the best parts is you can make them ahead of time and have them ready to go in the freezer. Make these in double or triple batches, wrap individual servings tightly, and freeze for quick weekday breakfasts. They'll last for at least a couple months frozen. Simply reheat in the microwave or toaster oven whenever you get a pancake craving.

Ingredients

Dry buckwheat pancake mix incomplete

¾ cup(s), add-water-only

Mineral water

fl oz

Apple

1 medium, peeled, cored and grated

Ground cinnamon

1 tsp

Reduced-calorie pancake syrup

3 Tbsp

Canned sweetened applesauce

1 cup(s), cinnamon flavored

Instructions

  1. To make batter, stir together pancake mix, water, apple and cinnamon.
  2. Coat a large, nonstick skillet with cooking spray and warm it over medium-low heat. Ladle out batter in small batches (2 to 3 tablespoons). Cook pancakes until nicely browned on both sides.
  3. Top with syrup and applesauce and serve. Yields 4 two-pancake servings.
