This delicious oatmeal recipe has you do all the work the night before, then all you have to do in the morning is stir in some honey, microwave for 3 minutes, and let it rest 10 minutes before serving. You can make a big batch to have some oatmeal on hand for every day of the week. All you need is apple cider or apple juice, steel-cut oats, a little bit of salt and honey, and chopped apples. Feel free to use pears or berries instead of the apple to take advantage of whatever you have on hand. You'll love having this breakfast ready to go during your oh-so-busy weekday mornings.

Apple cider

½ cup(s), or unsweetened apple juice

Water

⅓ cup(s)

Uncooked steel cut oats

¼ cup(s)

Table salt

1 pinch(es)

Honey

1 tsp

Apple

½ small, chopped

In medium (about 4-cup) microwavable bowl, combine apple cider, water, oats, and salt. Cover with wax paper and microwave on High 3 minutes. Let stand at room temperature 30 minutes. Cover and refrigerate overnight.

To oat mixture, add honey; stir to mix well. Cover and microwave on High 3 minutes. Stir, then cover and let stand 10 minutes. Transfer to smaller bowl and top with apple.

Serving size: 3/4 cup oatmeal and 1/2 cup apple
