Air fryer zucchini, corn, and feta fritters

These easy fritters provide summery goodness in every bite, with the crisp, sweet pop of fresh corn kernels and the mild meatiness of zucchini. They’re great as either an everyday side dish or appetizer for a casual gathering. Fresh corn definitely offers the best flavor and texture, but in a pinch you can use canned. As you air-fry subsequent batches of fritters, you can keep the cooked ones warm in a 200°F oven; place on a wire rack in a sheet pan so they don’t get soggy on the bottom.

Self-rising flour

Instructions

Place zucchini on a double layer of paper towels; gather edges and squeeze firmly over the sink to extract as much liquid as possible. In a medium bowl, combine zucchini, corn, and scallions. Make a well in center of mixture. Add egg and egg white, and stir with a fork until lightly beaten. Beat flour into egg mixture. Fold in vegetables, and stir in cheese, salt, and pepper.

Preheat an air fryer, if necessary, to 400°F. Line bottom of air fryer basket with parchment paper, and coat with nonstick spray. Drop zucchini mixture by 2-tablespoonfuls into air fryer basket with a little space between each (you should be able to fit 4 to 6 fritters). Coat tops of fritters with nonstick cooking spray. Air-fry until browned and set, 8 to 10 minutes. Lift out cooked fritters with a metal spatula. Repeat process with remaining zucchini mixture.
