Air-Fried Tostones with Avocado Sauce

Traditional tostones are twice-fried, but we take a lighter air fryer approach to this savory plantain snack. You’ll need to use green plantains, which taste more savory-starchy than the sweet ripe yellow ones. The plantains are cut into chunks and air-fried until tender, then smashed and air-fried again to make crispy “chips.” The accompanying garlicky avocado sauce is great for dunking.

Preheat an air fryer, if necessary, to 350°F. Place the plantain pieces in the air fryer basket and lightly coat them with cooking spray. Air-fry for 5 minutes; turn the plantain pieces over and air-fry until tender when pierced with a knife, about 5 minutes. Remove the plantain pieces to a cutting board or work surface.

Preheat the air fryer, if necessary, to 400°F. Place each plantain piece inside a folded piece of parchment paper; flatten the plantain piece by pressing down with a mug or heavy glass. Coat the plantain pieces with cooking spray on both sides; sprinkle with ½ tsp salt. Arrange half of the plantain pieces in the air fryer basket. Air-fry until lightly browned and crisp, 6 to 8 minutes, turning over after 4 minutes. Repeat with the remaining plantain pieces.

Meanwhile, in a mini food processor, process the cilantro, yogurt, lime juice, and remaining ¼ tsp salt until the cilantro is finely chopped. Add the avocado and garlic; process until smooth, stopping to scrape down the sides of the bowl as needed. Serve the sauce with the tostones.
