Air-fried strawberry cheesecake bites

Satisfy a craving for state fair fare with this lighter version of a typically deep-fried dessert. Our cheesecake bites have a crispy wonton shell and creamy, lightly sweetened filling made with Neufchatel cheese, yogurt, and fresh strawberries. Make sure to check on the bites on the front end of the cooking time and stop the air fryer just when they’re golden brown; cooking only a minute too long will cause them to burst.

Plain fat free Greek yogurt

Vanilla extract
0.5 tsp
Powdered sugar (confectioner's)

Instructions

In a small bowl, stir together the Neufchatel, yogurt, vanilla, and 2 tablespoons plus 1 teaspoon sugar. Fold in the strawberries.

Working with 1 wonton wrapper at a time, place the wrapper on a work surface (cover remaining wrappers to prevent them from drying out). Moisten the edges of the wrapper with water. Spoon about ½ tablespoon filling into the center of the wrapper. Bring two corners of the wrapper together and pinch the points together to seal. Bring the remaining 2 corners to the center and pinch to seal. Pinch all four edges together to seal. Repeat with the remaining wrappers and filling.

Preheat an air fryer, if necessary, to 350°F. Coat the air fryer basket with cooking spray and arrange the cheesecake bites in a single layer; coat the tops of the cheesecake bites with cooking spray. Air-fry until golden brown and crisp, 6 to 7 minutes. Sprinkle with the remaining ½ teaspoon sugar.
