This single-serve muffin recipe comes out piping hot in under 10 minutes from start to finish. If you can't find fresh dates, swap in chopped apple or pear, fresh blueberries, or diced strawberries instead. Though we topped the muffin with whipped topping, you can use a dollop of vanilla yogurt instead. Experiment with different seasonings such as all-spice or nutmeg instead of cinnamon.

Instructions

Place oats, banana, cinnamon, egg, and dates in a large (2-cup) microwave-safe mug; stir to combine.

Wipe inside edge of mug clean with a paper towel (or clean dish towel). Microwave, uncovered, on High for 90 seconds, or until top is just firm (and muffin is cooked through).
