Notes

Combine shallot and pepper in a mug, and spray with cooking spray; microwave 2 minutes. Stir together bacon, eggs, water, 1 Tbsp cheese and a pinch of salt and pepper; pour into mug and stir to combine. Microwave for 1 minute; stir well. Microwave an additional 30 seconds; stir. Top with remaining Tbsp cheese; microwave for 30 seconds to melt.
