Chicken a l'Onion
uncooked boneless skinless chicken breast
quick cooking brown rice
onion soup mix
½ packet(s), or about a Tbsp
2 cup(s), from grocery store
diet Italian salad dressing (2 calories per tbs)
In a large saucepan cook rice according to package directions, but add onion soup mix to pan before cooking. Brown chicken breast in olive oil and slice into strips. On a plate spread chicken strips over rice and serve with dressed mixed greens on the side.
