Whether you're a novice in the kitchen or an expert home cook, we all run out of dinner ideas eventually and can be left scrambling come 5 o'clock (hummus and crackers can count as dinner, right?!). Planning at least a few dinners for the week ahead of time is a great technique for staying on track and saving time in the kitchen (not to mention the grocery store).

Here are seven simple, delicious recipes for this week that make the most of what spring has to offer, finishing up with a couple of recipes fit for celebrating Cinco de Mayo.
