This super speedy and fun meal is a great way to celebrate the Chinese New Year, but fast and easy enough for any day of the year. Lettuce is a favorite food for Chinese New Year because the word for lettuce in Cantonese saang choi is a homonym for prosperity and wealth. Ready in about 20 minutes, these tacos are really flavorful with the cool crunch of fresh cucumber and scallions, in addition to the lettuce leaves themselves. The sweet hoisin, spicy sriracha and briny soy sauce come together for a well-balanced flavor, not too spicy or sweet. Serve with a side of your favorite sauteed vegetables to complete the meal. You can also add some steamed brown rice to the plate for an even heartier meal.

Ingredients

Hoisin sauce

2 Tbsp

Sriracha chili sauce

2 Tbsp

Less sodium soy sauce

1 Tbsp

Peanut oil

1 Tbsp, or vegetable oil

Fresh ginger

1 Tbsp, minced

Uncooked ground pork

½ pound(s), *

Bell pepper

1½ cup(s), diced in 1/2-inch pieces

Cucumber

½ cup(s), seedless, unpeeled (diced)

Scallions

½ cup(s), chopped, chopped

Bibb lettuce

12 leaf/leaves, medium

Instructions

  1. In a small bowl combine hoisin, sriracha and soy sauce.
  2. Heat a 14-inch flat-bottomed wok or 12 inch skillet over high heat until a bead of water vaporizes within 1 to 2 seconds of contact. Swirl in oil, add ginger, and stir-fry 10 seconds or until fragrant. Add pork and stir-fry 1 minute breaking up pork with metal spatula or until meat is almost cooked. Add bell pepper and stir-fry 30 seconds or until just combined. Swirl in sauce and cover for 30 seconds. Uncover, stir-fry 1 to 2 minutes or until pork is just cooked through. Remove from heat and add cucumber and scallions. Serve with lettuce leaves: have diners put about 1/4 cup of filling in a lettuce leaf, fold leaf over and eat like a taco.
  3. Yields 3 lettuce wraps per serving.

Notes

*Ground chicken or turkey can be substituted for pork.
