Sumac-roasted winter berries with mascarpone cream

This attractive crimson spice packs a tart, citrussy punch, and perks up this delicious autumnal take on fruit salad


Ingredients
Frozen Mixed Berries
800 g
Sumac
2 teaspoon(s), level, 1 ½ , plus extra to garnish
Honey
4 teaspoon(s), level
Mascarpone Cheese
75 g
0% fat natural Greek yogurt
50 g
Mint, Fresh
8 sprig(s)

Preheat the oven to 190°C, fan 170°C, gas mark 5. Place the berries into a medium roasting tin, sprinkle over the sumac and drizzle over 3 tsp honey. Roast in the oven for 25 minutes, until soft and syrupy. Leave to cool in the tin for 10 minutes.

Meanwhile, whisk together the mascarpone, yogurt and remaining honey until smooth. Divide the roasted berries between 4 bowls and top each with the mascarpone cream. Garnish with the mint leaves and serve.
