Steamed Greens with Hot Lemony Dressing

For a light and healthy vegetable accompaniment to any dinner - or any special meal - serve these delicious vegetables in a lively lemon dressing.


Ingredients
Green Beans
200 g
Asparagus, raw
200 g
Broccoli, raw
300 g, broken into small florets
Cabbage
½ g, Savoy, shredded
Lemon
1 medium, (grated rind and juice)
Olive Oil
2 tablespoon(s)
Parsley, fresh
1 tablespoon(s), fresh flat leaf, chopped
Salt
⅛ teaspoon(s)
Black pepper
⅛ teaspoon(s)
Capers, in Brine
6 teaspoon(s), rinsed and drained
Instructions

Put the green beans, asparagus spears, broccoli and cabbage into a steamer. Alternatively, put into a large saucepan with a small amount of water, with a tight-fitting lid.

Steam or simmer the vegetables for 8 - 10 minutes, until they are cooked, yet still have a little "bite".

Mix together the lemon rind, lemon juice, olive oil and chopped parsley. Season with salt and pepper.

Drain the vegetables and toss immediately in the dressing. Serve at once, sprinkled with the capers.
