Spinach & coriander soup
Calorie controlled cooking spray
2 medium, peeled and chopped
2 clove(s), finely chopped
2 portion(s), medium, peeled and chopped
1 teaspoons, level, seeds
180 g, bag baby spinach
Fresh Vegetable Stock
1200 ml, vegetable
2 tablespoons, a small bunch, roughly chopped
- Spray a large saucepan with cooking spray and stir-fry the onions, potatoes and garlic with the ground coriander for a few minutes then add a couple of tablespoons of water, turn the heat down to a minimum and cover the pan.
- Leave to sweat for 15 mins, until the onions are soft.
- Add the spinach, coriander and stock and cook for a further 10 mins. Liquidise the soup and check the seasoning before serving.
