Grilled steak with kiwi fruit salsa

Ingredients
Kiwi Fruit
2 medium, thinly sliced
Lemon Juice, Fresh
3 teaspoon(s)
Garlic
3 clove(s), crushed
Dijon Mustard
1 tablespoon(s), level
Beef fillet steak, lean, raw
450 g
Calorie controlled cooking spray
4 spray(s)
Kiwi Fruit
2 medium, diced
Cherry Tomatoes
12 individual, halved
Red onion
¼ small, chopped
Coriander, fresh
2 tablespoon(s), chopped
Olive Oil
4 teaspoon(s)
Chilli flakes
1 pinch
Lemon Juice, Fresh
2 teaspoon(s)
Instructions

Put the kiwi slices into a small bowl and mash using a fork. Stir in the lemon juice, garlic and mustard, then season with freshly ground black pepper. Put the steak on a plate and spread the kiwi mixture over both sides. Set side for 15-20 minutes to tenderise.

Meanwhile, make the kiwi salsa. Combine all the salsa ingredients in a bowl, then season to taste.

Set a large nonstick griddle pan over a high heat. Shake the excess marinade from the steak, then pat dry using kitchen paper. Mist the steaks all over with cooking spray, then season well. Griddle for 5-7 minutes, turning once, or until cooked to your liking. Remove from the griddle and set aside to rest for 5 minutes before slicing.

Serve the griddled steak topped with the kiwi fruit salsa.
