Chickpeas, cooked

Low Fat Soft Cheese
5 g
Crunchy Peanut Butter
75 g
Light Brown Sugar
70 g
Vanilla Extract
½ teaspoon(s), level
Plain White Flour
2 tablespoon(s), level
Icing Sugar

Cocoa Powder
2 tablespoon(s), level

Combine the chickpeas, soft cheese, peanut butter, brown sugar, vanilla extract and a pinch of salt in a food processor and blend until completely smooth. Add the flour and pulse briefly until just combined. Refrigerate for an hour or until the mixture is chilled.

Using a melon baller, scoop the mixture into 36 small balls and gently place in a large bowl.

In a small bowl, sift together the icing sugar and cocoa powder. Gently toss the bites in 2 tablespoons of the mixed icing sugar and cocoa powder, reserving the rest.

Arrange the coated bites on a plate and keep chilled until ready to serve. Dust with the remaining icing sugar and cocoa powder just before serving.
