Vegan plum and almond parfait
2 large, halved
vanilla bean extract, alcohol free
plain unsweetened soy yoghurt
1 individual, (5g)
Grill fresh plums for 4-5 mins or until softened and browned. Place on a small plate. Sprinkle with brown sugar and mixed spice and gently toss. Stir vanilla extract into yoghurt. Layer vanilla yoghurt in a glass with grilled fruit and serve with 1 slice store bought almond bread.
