Thai fried rice

Heat 1 tsp olive oil in a wok over medium-high heat. Stir-fry 6 cherry tomatoes (halved) for 2 minutes or until softened. Add ½ bunch broccolini (chopped) and cook for 1-2 minutes until slightly tender. Add ½ cup (100g) steamed basmati rice, plus 1 tsp reduced-salt soy sauce and stir-fry for a further 2 minutes or until heated through. Serve topped with 1 fried egg and serve with fresh coriander sprigs and lime wedges.
