Heat 1 tsp olive oil in a medium frying pan over medium-high heat. Cook 4 asparagus (cut into chunks) and 1 zucchini (sliced) for 3-4 minutes or until just tender. Add 2 eggs (lightly beaten), handful baby spinach leaves and 50g reduced-fat feta (crumbled). Cook for 3-4 minutes or until egg is just set. Have with 1 slice high-fibre wholegrain bread (toasted).
