Crumbed fish with oven wedges
200 g, bones removed
1 small, , lightly beaten
1 medium, , cut in thin wedges
1 cup(s), , cut into florets, steamed
100 g, , (1/2 bunch), ends trimmed, steamed
Dip fish in egg and sprinkle with polenta and refrigerate. Preheat oven to 200C. Spray potato wedges with oil and cook in a single layer for 30 minutes or until golden. Toss occassionally. When potatoes are almost ready, place the fish in oven an spray with oil. Bake for a further 10-15 minutes or until fish is cooked through. Season to taste with salt and pepper and serve with vegetables.
