Cottage cheese frittata

Canned corn kernels, rinsed and drained

Baby spinach

¼ cup(s), chopped

fresh chives

Cherry tomatoes

80 g, truss variety

Preheat oven to 180°C. Spray a small 2/3 cup (160ml) capacity ramekin or oven-proof dish with oil and line with baking paper. Whisk cottage cheese and egg in a bowl until combined. Stir in corn, spinach and chives and season with salt and pepper. Pour mixture into prepared dish and bake for 30 minutes or until set and golden. Meanwhile, line an oven tray with baking paper and arrange tomatoes on the tray. Bake for 20-25 minutes or until soft. Carefully remove frittata from dish and serve with the roasted tomatoes, extra chives and watercress sprigs.
