Banana & passionfruit trifle

low-fat custard

60 g, (1/4 cup)

caster sugar

1 tsp

vanilla bean extract

¼ tsp

sponge finger biscuits

1 individual

diet jam

1 tsp, (strawberry)


1 tbs, pulp


Using a fork, mash 1 small banana in a bowl until smooth. Fold in ¼ cup low-fat vanilla custard. Combine 1 tbs hot water, 1 tsp caster sugar and ¼ tsp vanilla essence in a small jug and stir until sugar has dissolved. Cut 1 small sponge finger biscuit into 1cm pieces and arrange in the base of a 250ml (1 cup) capacity serving glass. Drizzle with the vanilla syrup. Top with 1 tsp diet strawberry jam and the banana mixture. Serve drizzled with 1 tbs fresh passionfruit pulp.
