Notes

Preheat oven to 180°C or 160°C fan-forced. Lightly spray 150g baby potato (halved), ½ red onion (cut into wedges) and ½ red capsicum (quartered) with oil. Bake on a baking tray lined with baking paper for 30 minutes. Add 150g lean chicken breast and 1 lemon wedge and bake for 10 minutes or until chicken is cooked through and vegetables are tender. Top vegetables with chicken and lemon. Serve sprinkled with 1 tsp fresh oregano.
