Our easy berry compote takes just a few minutes in the microwave. We cook fresh blueberries for a few minutes until they’re very bubbly, then stir in some raw berries for textural contrast and juicy bursts. Blueberries have enough pectin that the compote has a slightly thickened consistency without any thickeners added.

Ingredients

Blueberries

2 cup(s), divided

Plain fat free Greek yogurt

4 cup(s)

Fresh mint leaves

1 Tbsp, chopped (optional)

Instructions

  1. In a medium microwave-safe bowl, microwave 1 ⅓ cups blueberries on High until very bubbly, 3 to 4 minutes. Remove the bowl from the microwave and stir in the remaining ⅔ cup berries.
  2. Spoon 1 cup yogurt into each of 4 bowls; top each serving with about ⅓ cup berry compote. Sprinkle the mint evenly over the bowls.
  3. Serving size: 1 bowl
