Winter Fruit Compote
Splenda No Calorie sweetener packets
½ tsp, freshly grated
2 medium, navel, peeled, white pith and pits removed
1 small, ruby red, peeled, white pith and pits removed
1 cup(s), red or green, seedless, halved lengthwise
4 piece(s), fresh, for garnish (optional)
- In a medium bowl, stir together Splenda, vanilla extract and orange zest until Splenda dissolves.
- Cut oranges and grapefruit into segments; add to vanilla mixture. Squeeze orange and grapefruit membranes over bowl to add juices. Add grapes; toss to mix and coat. Serve immediately or cover and refrigerate up to 2 days.
- To serve, spoon fruit into compote cups and drizzle with juices. Garnish each serving with a mint leaf. Yields about 3/4 cup per serving.
