Wheat berry breakfast salad with apple

This salad is a fresh, healthful breakfast option to start your day. You can cook the wheat berries ahead of time so the rest of the recipe comes together fast. Feel free to add 1/2 cup plain fat-free Greek yogurt for a nice addition of protein.
Ingredients
Uncooked wheat berries
1 cup(s)
Table salt
½ tsp
Apple
1 small
Pear
1 small
Orange
1 small
Kiwifruit
1 medium
Grapes
½ cup(s)
Orange zest
½ tsp
Fresh lemon juice
1 Tbsp
Peppermint leaves
1 Tbsp
Sliced almonds (unsalted, no oil or sugar added)
4 Tbsp
Instructions

Bring medium saucepan filled two-thirds with water to boil over medium-high heat; stir in wheat berries and salt. Reduce heat and simmer, covered, until berries are tender but still chewy, 45 minutes–1 hour. Drain in colander and rinse under cold running water; drain again.

Combine wheat berries, apple, pear, orange, kiwifruit, grapes, orange zest, lemon juice, and mint in medium bowl. Serve, or cover and refrigerate up to 2 hours. Sprinkle each serving with 1 tablespoon almonds.
