If you can’t find fresh blueberries in your market, substitute another fresh berry or use thawed frozen unsweetened blueberries, found in the freezer case.

Instructions

  1. Stir together the ricotta, maple syrup, cinnamon, and nutmeg in a small bowl.
  2. Toast the waffles according to the package directions.
  3. Place a waffle on each of 4 plates and top evenly with the ricotta mixture. Sprinkle evenly with the blueberries and pecans. Yields 1 waffle, 1⁄2 cup blueberries, and 1 tablespoon pecans per serving.
