Here's the perfect waffle recipe to make if you really want to impress yourself and your guests and start your morning off right. It's chockfull of flavor yet comes together quickly. The ricotta cheese is combined with sweet maple syrup, ground cinnamon, and a touch of ground nutmeg. The waffles are topped with this creamy mixture, then sprinkled with lots of fresh blueberries and chopped pecans as the finishing touch. If you can’t find fresh blueberries in your market or they're out of season, you can substitute another fresh berry or use thawed frozen unsweetened blueberries, which are usually found in the freezer case.

Stir together the ricotta, maple syrup, cinnamon, and nutmeg in a small bowl.

Place a waffle on each of 4 plates and top evenly with the ricotta mixture. Sprinkle evenly with the blueberries and pecans. Yields 1 waffle, 1⁄2 cup blueberries, and 1 tablespoon pecans per serving.
