Turkey, Apple & Blue Cheese Wrap

This wrap brings together juicy apples, peppery arugula, and a blue cheese-spiked cream cheese spread, all to make the most of cooked turkey. This combination of flavors and textures is especially nice when you have Thanksgiving leftovers on hand. To add a pop of flavor to the arugula, toss it with a little fresh lemon juice or your favorite light vinaigrette before adding it to the wrap. If you happen to have more leftover vegetables, or some fresh herbs in the fridge, add those too! The whole thing comes together in 10 minutes.


Ingredients
Blue cheese
1 Tbsp, at room temperature
Low fat cream cheese
1 Tbsp, softened, at room temperature
Black pepper
⅛ tsp, freshly ground (or to taste)
Whole-wheat tortilla
1 tortilla(s), medium, warmed according to package directions
Arugula
½ cup(s), baby leaves
Apple
½ medium, diced
Cooked skinless light turkey meat
2 oz, chopped or diced (about 1/2 cup)
Instructions

In small bowl, mash blue cheese, cream cheese, and black pepper together with fork. Over tortilla, spread mixture. Top tortilla with arugula, apple, and turkey, leaving about 1 inch of space from edges; fold in opposite sides and roll tortilla up tightly. Slice in half.
